Working here are; from left; Maria Maria; Nina Sirizzotti; Carmi Medeiros. Because the farm is close to Metro the mushrooms can be brought in to the consumers while they are at their peak of freshness and workers from the city can be transported to and from the farm daily. Mushroom spores are planted in slat-sided beds which tier the growing houses and contain pasteurized compost. It takes more than three weeks for the crop to reach the stage of growth shown here. Recipes for using mushrooms are given below.
